I used the leftover couscous from the stir fry we had on salad night to make this salad. I cut off the corn kernals from one cob we had leftover, added chopped up artichoke hearts (from a can), a can of mixed beans and chopped up an avocado. For the dressing I used olive oil, red wine vinegar, salt pepper and chilli peppers to give it a kick! This is a good side salad! It also made lots, so we will likely eat it for 3 days!

Hi Laura,
Whenever I make lettuce-less salad and use coucous, I usually end up adding tomato, cucumber, red onion and feta cheese and then a greek salad type dressing.
I am not sure I would have thought of beans :) Interesting! I will have to include them in my next foray! Take care.
